Chicken Sliders

Mini chicken burgers
These burgers are super cute. Sliders are mini burgers about 2-3 inches in diameter, served with all the fixins and sides of your choice. So use any ingredient for the patty--chicken, lamb, turkey and roll out a small sized burger patty. the only problem could be finding small sized burger buns. Almost all supermarkets carry sliders in both regular and whole wheat varieties. If you cannot find them then use dinner rolls instead.

Mini Chicken Burgers (Sliders)
Ingredients: (makes about 14)
1 lb minced chicken
1 egg
3-4 cloves garlic grated
1/2 red onion chopped fine
Handful fresh corriander chopped
Handful fresh dill chopped
salt to taste
3 tsp dry bread crumbs
1tsp hot chili sauce
2-3 green chillies chopped fine (optional)
  • Place the mince chicken in a mixing bowl and add all other ingredients to it.
  • Work them into the chicken well with your hand.
  • Shape into 2-3 inch diameter patty depending on the size of your bun. Place them on a wax paper
  • At this point you have an option to freeze any extra burger patties. Freeze them in an airtight container with wax papers in between to prevent sticking.
  • Stick the rest of them in the fridge for 15 minutes before cooking.
  • Grill them on medium high for 7 minutes per side till fully cooked.
  • Serve hot inside the buns.

Assembling Sliders
Place the chicken patty on the bum and top it with some or all of the following.
Mayonnaise, mustard sauce, hot chilli sauce, red onion rings, tomato slices, lettuce or baby spinach, relish, dill pickles.

Fish Burger with Sauteed Mushrooms and onions

Summer bar-be-que just isn't complete without burgers. Could be any type- fish, chicken, lamb or even veggie ones.
Today we made salmon burgers. The mushrooms and onions sauteed in butter served over the burger gives a rich flavor and enhances the smokiness. Dress the burger anyway you like with mayonnaise, hot sauce, sliced cheese, but it tastes great as is. i used whole wheat kaiser buns instead of the regular burger buns. kaiser buns have a better texture and body.
I served a simple baby spinach salad with cranberries and pecans dressed with a simple vinaigrette. You can add your fave dressing.

Salmon Burgers
Ingredients: (Makes 4 ) 
1lb salmon fillet skinned
3 cloves garlic
1/2 red onion chopped fine
1 egg
salt to taste
Dash of chilli sauce
1 tsp dry dill
2 tbsp dry breadcrumbs
fresh parsley or coriander chopped finely
1 tsp lime juice
4 Kaiser Buns
  1. Cut salmon into small chunks and in a food processor pulse together salmon, garlic.
  2. Take the mixture out in a bowl and add the rest of the ingredients. Mix well and shape into 4 (2cm thick) patties. layer them between wax paper and refrigerate for 15 minutes. These patties could be made ahead and stored in an airtight container for up to 24 hours. 
  3. Place them on a greased grill over medium high heat. cook with lid closed and turn after 5-6 minutes. Cook on the other side for another 5 minutes until internal temperature of 70C is reached.
  4. Serve in between sliced kaiser bun topped with sauteed onions and mushrooms and any other condiment desired--mayonnaise, hot sauce, etc.
Grilled Fish Burgers

Sauteed Mushrooms and Onions
  1. Melt 3 tablespoons of butter in a large skillet. Add 1 large sliced red onion and saute till pink.
  2. Add sliced mushrooms and turn the contents around so that they all get coated with butter. Let cook without disturbing for about 2-3 minutes on one side. 
  3. Do not add any salt yet as it will make the mushrooms water and prevent them from browning. 
  4. Turn the mushrooms over and cook on the other side till rich golden brown.
  5. Season with salt and cracked black pepper. Serve hot over the burger.

My 50th week in the blogging world


Cooking has always been a passionate hobby for me and constantly lookout for new recipes and an opportunity to try new cuisines. About a year ago I decided to record all the recipes I was trying and a blog seemed  like a wonderful place. Here I could go back to them myself, share them with anyone who is not only as passionate as me about food but also believes in healthy and flavorful eating, and finally a recipe box my girls can access in future to cook 'like mom' if they so desire. 
So  Fab Friday was born in September 2010. About a year and nearly 100 recipes later, it is still going strong. I mostly run this blog alone with a little help from my husband who helps take pictures along the way. I have always believed in eating healthy and whatever food you see on this blog is what I cook at home and feed my family. 
This is my 50th blog article and I have great fun cooking and documenting. Thanks to everyone who has encouraged me along the way and inspired me to carry on. It has been quite an experience.

Tzatziki Sauce



Tzatziki is a cool and creamy Greek sauce, served a s condiment with grilled meats such as souvlaki, gyros and also as a dip. This tangy sauce has a strained yogurt base and is flavored with cucumber, garlic and lime juice. Always served cold it is a great complement to sizzling grilled entrees.
Tzatziki sauce
Ingredients:

1/2 cup thick plain yogurt(Greek yogurt or hung yogurt)
1/4 cucumber peeled, grated and drained
1/2 tsp olive oil
1 tsp lime juice
1 small clove of garlic crushed
1/2 tsp dried or fresh mint
salt to taste
  1. Mix all the ingredients together. 
  2. Cover and chill. 
  3. Great accompaniment with shish kabab and grilled fish.


How to make hung yogurt
Place a sieve lined with cheese cloth over a bowl. Put 2 cups of plain yogurt (yields 1 1/2 cups of hung yogurt) on the cheese cloth, cover and place in the refrigerator overnight (minimum 4-5 hours). All the water from the yogurt will filter out into the bowl leaving a thick creamy hung yogurt perfect for making Tzatziki.
